# Cha Chaan Teng: Comfort Food From Hong Kong's Iconic Diners

Cha chaan teng are Hong Kong's everyday diners, and their dishes grew from the city's colonial past, its migration and the meeting of Eastern and Western cooking. Peanut butter French toast, curry chicken pie and Cantonese bolognese are among them, and the food has long fed day labourers and schoolchildren alike. Lucas Sin, a chef, teacher and writer named a Food & Wine Best New Chef in 2021, grew up eating in these diners. As his home city changes, he has set out to record the recipes he loved.

The recipes are his own interpretations of classics such as beef brisket soup, pineapple buns, slippery eggs over rice and milk tea. The cooking is affordable and quick, suited to anyone who loves Hong Kong or simply loves food that comforts.
